Step into fifteenth century stone vaults and you enter another Paris entirely. The M. sits nested inside these medieval cellars, part museum, part wine collection, part exceptional dining experience. Chef Valentin Néraudeau and his team work with seasonal ingredients, sourced locally, prepared with obvious respect for tradition and thoughtful innovation. The menu changes twice weekly following what the market delivers and what the seasons permit. Every plate arrives designed to converse with the wine list.
Butternut ravioli with brown butter and sheep’s milk cheese. Leeks vinaigrette reimagined with roasted young leeks, preserved egg yolk, crispy bread. Market vegetable blanquette in coconut milk with pilaf rice. Beef noisette with anchovy cream. Thick cod fillet with beurre blanc and celery purée with hazelnuts. The wine program announces itself immediately: over two hundred selections drawn from French terroirs, curated with obvious intention. A sommelier works in harmony with the kitchen, proposing wine pairings that enhance rather than compete.
The space holds magic. Stone vaults create intimate warmth. The room surrounds you with history while remaining utterly present. Open Wednesday through Saturday from noon to three, Friday evenings until midnight. This is dining that remembers it occupies history while making its own.
