They bring thirty years of combined professional experience across New York, California, Montreal, and Paris to this quiet corner of the 16th. The chef draws inspiration from classical French tradition and adds a contemporary sensibility, but his true mission remains simple: highlight seasonal ingredients with meticulous care. The menu changes to follow the market. There is no written menu. Each diner receives a single set progression tailored to the produce of the moment.
Cauliflower soup arrives refined and substantial. Scallop carpaccio with Meyer lemon speaks of the ocean without apology. Roasted kabocha squash with roasted lemon purée demonstrates how depth emerges from restraint. Cuttlefish risotto. Pressed veal with potato millefeuille shows classical French technique made contemporary. Blood orange sorbet cleanses the palate.
