Since 1989, L’Huîtrier has owned the conversation about oysters in Paris. Tucked two steps from Place des Ternes on a quiet street in the 17th, this maritime bistro proves that legendary restaurants don’t need to announce themselves. The space whispers: three small rooms with mirrors on the walls, a few bird prints, tables spaced for conversation, the kind of calm that comes from knowing exactly what you do and doing it for thirty years. Owner Alain Bunel presides over a kitchen where the focus never wavers. Francisco Pirès works as master shucking artisan, accumulating international awards while taking visible, obsessive care with each plateau and every shellfish that crosses his station.

The oysters arrive from Marennes-Oléron, Brittany, and Ireland, properly chilled and gleaming. Gillardeau, Tarbouriech, Ostra Regal. Accompanied by sea urchins, whelks, shrimp, clams, periwinkles, langoustines when the ocean is good. The Norwegian smoked salmon plate sings. American salmon roe arrives fresh as morning. Stuffed oysters with butter, garlic, parsley justify their own orbit. Then come the fish: haddock, monkfish, John Dory, red mullet, gilt head bream grilled whole, sole meunière prepared with the respect it deserves. Tuna tartare that tastes like the fish was caught yesterday. Crab salad, anchovies fried fresh. Scallops. Cuttlefish with Provençal spices. The platters are customizable, built specifically for your table, your hunger, your mood.
