Stuffed oysters with butter, garlic, parsley justify their own orbit. Then come the fish: haddock, monkfish, John Dory, red mullet, gilt head bream grilled whole, sole meunière prepared with the respect it deserves. Tuna tartare that tastes like the fish was caught yesterday. Crab salad, anchovies fried fresh. Scallops. Cuttlefish with Provençal spices.
