At our Restaurant, the food is mostly inspired by French gastronomic tradition all the while respecting the fresh products delivered daily and cooked on-site in our Parisian restaurant. The à la carte and set menus are reworked several times a year, so as to favour fresh and seasonal products through « homemade » dishes. The must-haves and representative dishes of the Train Bleu will be served on the new menu. You will find: the leg of lamb, carved on a trolley in front of you, the tartar seasoned at your table, the « homemade » semi-cooked duck foie gras, the « homemade » smoked salmon, the roasted Foyot veal chop, the rum « baba » cake, etcare reworked several times a year, so as to favour fresh and seasonal products through « homemade » dishes. “I wish to give the same emotion in the plate that you can get when looking out the window.”
Originally from Champagne-Ardennes area, he worked twenty years by the side of the greatest Chefs before directing the Château de Bagnols’ kitchens from 2001 to 2003 and the ones of the Château de la Chèvre d’Or in Eze, from 2003 to 2009.
After getting his diploma from Strasbourg’s Illkirch Hotel School, he joined in 1981 the kitchen brigade of Chef Bernard X at La Côte d’Or restaurant in Saulieu. Later he joined the team of Gérard X at Les Crayères in Reims and the one of Roger X at the Moulin of Mougins. He built himself a strong experience in worldwide famous hotels and palaces such as the Carlton in Cannes or the Plaza Athénée in Paris.
A pleasant “Bouchon Lyonnais” acquired in 1989 by Claude Terrail, the character of the Rôtisserie evolved naturally over the years into that of a typical Parisian bistro. Its famous rôtisserie constitutes the heart of the place, a heart that never stops beating and is a standing invitation to come and share the spirit of a “country house” in the heart of Paris far from the occasional snobberies.
Ideally located on the left bank of the Seine, nestled between the banks of the river and Mount Sainte-Geneviève, a stone’s throw away from the Quartier Latin, la Rôtisserie beckons the islands of Notre Dame. Snuggled against her elder sister the Tour d’Argent, she respects her values, and is dedicated to the pleasures of her customers who are as demanding as they are eclectic.
Familiar neighborhood guests, businessmen, local figures, politicians, artists and others gather around our tables. and it is not uncommon to see those who did not know each other just an hour ago deep in conversation! Who knows: your future best friend or your next partner may be at a table at the Rotisserie. Why not join him here?
